A Guided Cheese Tasting at Pellissippi State Community College
Cheese is one of the oldest, most incredible foods on earth — born of accident, perfected by tradition, and shaped by place. In this immersive, mouthwatering class, we’ll explore how cheese was first discovered, how it’s made, and how milk transforms into everything from delicate bloomy rinds to bold, crystalline wheels.
Together, we’ll taste our way through a curated selection of domestic and international cheeses, exploring distinct regions, styles, and milk types. You’ll learn how to identify major cheese categories, understand texture and aging, and recognize the flavor markers that tell the story of where a cheese comes from.
Along the way, we’ll cover:
- The fascinating origins of cheesemaking
- The essential steps in the cheesemaking process
- The major cheese families (and how to recognize them)
- Pairing principles for wine, beer, and beyond
- Practical tips for building a cheese board
- Simple, inspired ways to cook and serve cheese at home
Each guest will receive a thoughtfully prepared tasting box featuring a variety of cheeses to sample throughout class. This is a guided, sensory experience — you’ll taste intentionally, compare styles, and begin building your own cheese vocabulary.
We encourage you to bring:
- A small notebook for recording tasting notes
- A bottle of water to refresh your palate
